Ingredients Required to Prepare Potato Soup with Dumplings 

  1. Medium-sized potatoes – 4 to 6 (cubed)
  2. Large onions – 2 (sliced and cubed)
  3. Celery ribs – 3 (chopped)
  4. Salt – 1 teaspoon or as needed
  5. Pepper – Half teaspoon or as needed 
  6. Milk – Half cup
  7. Butter – 2 to 3 tablespoons
  8. Corn starch – 4 tablespoons (mixed with 1 cup of water)
  9. Eggs – 2 large (beat them with a fork slightly)
  10. All-purpose flour – 1 to 2 cups
  11. Baking powder – 1 to 2 pinch
  12. Salt and pepper – Half teaspoon or as needed
  13. Onion powder – 1 teaspoon 
  14. Dried parsley – 3 to 4 tablespoons 

Steps to Prepare Potato Soup with Dumplings 

Step 1: Take a large pot. Add potatoes, celery, and onions. Then, pour water so that the vegetables are immersed in it. Don't add extra water. Add only for immersing.

Step 2: Boil the water. Cook the vegetables until they turn tender. It will take approximately 15-20 minutes.

Step 3: Don't strain the water from the vegetables. Add milk to these vegetables and turn the flame to medium. Let your soup bubble. 

Step 4: Add butter. Make the consistency of the soup to become thick with cornstarch and water. Wait till it turns smooth.

Step 5: Taste the broth to check if salt and pepper are sufficient. Add some more salt and pepper if required.

Step 6: Take a bowl. Add the whipped eggs, onion powder, salt, pepper, and dried parsley into it. You can also add water to this mixture. Combine all the ingredients together.

Step 7: Now, mix the flour and baking powder, and add them to your egg mixture. The mixture will be wet initially, but you need not worry. Just continue adding the flour mixture until it separates from the sides of the bowl and sticks to the fork.

Step 8: Take a spoon and dip it in the broth. Then, add drop by drop into the top of the soup pot and empty the bowl. If you find some loose flour remaining in the bowl, add it to the broth. This will help the broth to become thick nicely.

Step 9: Close the pot and leave it aside for 12 minutes. After this time, open the lid. You can see many delicious little dumplings floating on the top. Add some more cornstarch if you want them to become more thick. You can add even a few tablespoons of butter.

Voila! Your scrumptious potato soup with dumplings is ready. You can have it with some salad.
